Abstract
This study was conducted to investigate the acceptability of Pandesal Enriched with Sessili Joy Weed (lupo) according to its sensory characteristic such as, appearance, flavor, texture and general acceptability. Specifically this study had the following objectives: 1.) To determine the acceptability level of Pandesal Enriched with Lupo in terms of appearance, flavor, texture and general acceptability. 2.) To determine the significant differences among the treatments in terms of appearance, flavor, texture and general acceptability of Pandesal Enriched with Sessili Joy Weed (lupo). 3.) To determine the cost and yield of the product.
This study was conducted at Capiz State University, Pilar Campus, from March 2018 and five (5) Treatments replicated three times. Treatment A (0g of Sessili Joy Weed), Treatment B (25g of Sessili Joy Weed), Treatment C (50g of Sessili Joy Weed), Treatment D (75g of Sessili Joy Weed), Treatment E (100g of Sessili Joy Weed).
The fifteen (15) experts` panel was composed of faculty and staff of Capiz State University, Pilar Campus. 5 BSHRM faculty and staff, 2 BSA faculty, 2 BSBA faculty, 2 BSSW faculty, 3 Administration office staff, 1 faculty of Research and Extension Services. The product was evaluated using a score card in a nine 9 point hedonic scale.
Results revealed that all treatments using 0g, 25g, 50g, 75, and 100g of Sessili Joy Weed were all acceptable in terms of appearance, texture, flavor and general acceptability of Pandesal Enriched with Sessili Joy Weed.
As to the cost, Treatment using 100g of Sessili Joy Weed obtained the highest cost. As to the yield, all treatments has not the same number pieces of Pandesal Enriched with Sessili Joy Weed. Data implied that using Pandesal Enriched with Sessili Joy Weed has not the same yield using varied proportion of Sessili Joy Weed per treatment.
